Sample Recipe: Shrimp Healthy/Fried Rice

  • 1 1/2 lbs shrimp, peeled and deveined
  • Coconut oil
  • 4 egg whites plus 2 whole eggs
  • 1/2 sweet onion, diced
  • 4 cups cooked brown rice that has been refrigerated overnight
  • 2 cups frozen mixed veggies (peas, corn, carrots)
  • 2-3 Tbsp soy sauce
  • Salt & Pepper
  • 1 tsp sesame oil

In a large wok, heat 2 Tbsp coconut oil over high heat. Generously salt and pepper the shrimp. Place them in the wok and cook stirring for 2-3 minutes, until pink. Remove from the wok and cut each shrimp into thirds, discard the tails. Add more oil if necessary then pour in the whipped eggs. Scramble until just cooked through, but still wet. Remove from the wok. Add the onion to the wok with more oil. Cook stirring for about 15 seconds. Add the rice and spread evenly in the wok. Resist the urge to stir. Listen for the sizzle in the rice. After about 2 minutes, toss the rice and let sizzle a little more. Add the veggies and the soy sauce, stirring. Add the shrimp, eggs and sesame oil, stirring. Add salt and pepper to taste.
